Recipe - Beef Enchiladas


1 pound ground beef
1 cup cottage cheese
1 can (4 1/4 ounces) chopped ripe olives, drained
2 tablespoons minced fresh parsley
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
8 flour tortillas (7 inches)


In a skillet, brown the ground beef. Drain. Combine with cottage
cheese, olives, parsley, garlic powder, salt, and pepper. Place
about 1/3 cup filling on each tortilla; roll up. Place tortillas,
seam side down, in an ungreased 13 X 9 X 2-inch baking dish.
